BOUNDARY BREAKS CHARDONNAY UNOAKED

The Finger Lakes region has a climate similar to that of the Chablis region of France. That means our wines can be made with bracing acidity that give them a refreshing, clean quality.

Unlike traditional oaky, buttery Chardonnay, this wine spent no time in oak barrels. It has a round, gentle flavor profile that comes from leaving the fermented wine in contact with the dead yeast cells (or “lees”) that were used to make the wine. This contact with the lees imparts a slight creaminess to the wine that keeps it from seeming overly austere.
