This Blanc de Noirs makes clear the potential of the Finger Lakes with traditional-method sparkling wines. The blend here is 95% Pinot Noir with a drop of Meunier, all from vineyards on Keuka Lake. Only the first-press juice is used, a bit of it fermented in cask. Thewine is three years on the lees and dosed at 8g/l, giving a well-integrated yeasty note of buttered toast with a floral edge and a suggestion of marzipan. The mousse is lively and carries the crisp yet creamy texture to a winning finish.
