The Saperavi grapes for this wine are from Iberieli’s vineyard located on gently sloping alluvial slopes in the prestigious Teliani Appellation of Georgia’s famed Kakheti Valley.  Vines are planted at 480-490m( ~1600feet) and soil is sandy clay loam with alluvial stones.  Viticulture is wholly organic in accordance with criteria of the Natural Wine Association of Georgia.

Saperavi (‘saw-per-ah-vee’) is Georgia’s most widely-planted red grape and is an ancient indigenous variety. One of the few teinturier (red skin and flesh)varieties, it is blessed with both high tannin and acidity, and is used to make a wide range of red wines.   Fresh berry and plum aromas are common, along with smoke and woodsy spice.  Iberieli Saperavi is famed in Georgia and many countries of the world where it is exported.

WINEMAKER NOTES

Under watch of esteemed winemaker Zurab Topuridze, grapes are hand-
harvested and manual de-stemmed in September, co-fermented on skins with a
relatively light amount of berries and only native on-grape yeast in qvevri for 2
weeks and then aged for 11 months in qvevri. Malolactic fermentation is
completed naturally.
