We believe this is the first of its kind ever created from Vignoles. Our méthode ancestral Vignoles (Pétillant Naturel or Pet Nat) takes its inspiration from the very first sparkling wines produced. Finishing its fermentation in bottle, it possesses a soft, leesy character of brioche and explosive tropical fruit. Drink immediately, with breakfast, lunch or dinner.
The fruit for our sparkling Vignoles comes solely from our Silvernail vineyard located on the eastern slopes of Keuka Lake. At a lower altitude and thus a warmer microclimate, our Vignoles achieves a ripeness that produces fruit on the tropical spectrum.
Hand harvested. Pressed and settled for 48hrs. Fermented in stainless steel at 59F until it reached 16 g/L. Fermentation was chilled, arrested and subsequently bottled. Bottled conditioned on lees at 65F for 4 months. No disgorgement or dosage.
