‘Poco a Poco’, or ‘little by little’ means this handmade organic chardonnay goes through a meticulous process and only about 500 cases are made. Fermented and aged in neutral French oak barrels, resulting in an oaky taste reminiscent of Burgundy with aromas of lemon, orange zest and minerality with a creamy finish. Bottled unfined and unfiltered.

While not yet certified, the 20 to 30 year old vines, used in this production of this wine are harvested organically and biodynamically.
