Estate-grown Riesling grapes were destemmed and fermented in an open-top bin with the skins and seeds included, then punched down daily until the wine reached near-dryness. It was then pressed off into older French oak barrels to finish fermentation, creating a more full-bodied white wine with complex layers of fruit.
